- 0.5 pound Boneless Beef Short Rib
- 1 pound Beef Chuck
- 0.5 pound Beef Brisket
- 0.2 pound Beef Fat

Grind each cut of meat and the beef fat separately using a coarse grind setting.

Measure out ½ lb of short rib, 1 lb of chuck, ½ lb of brisket, and 0.2 lb of beef fat.

In a large mixing bowl, combine the ground short rib, chuck, and brisket using your hands. Mix gently to avoid overworking the meat.

Gradually add the ground beef fat to the mixture, gently folding it in until evenly distributed. Be careful not to over-mix.

Divide the mixture into 4 equal portions.

Roll each portion into a loose ball, then press down gently to form a patty approximately ¾ inch thick.

Place the patties on a tray, cover with plastic wrap or parchment paper, and refrigerate for at least 1 hour—preferably overnight—to help the patties bind and hold their shape during cooking.
