Strained yogurt—also known as hung curd—is a thick, creamy base commonly used in Indian cuisine. Made by draining whey from regular yogurt through cheese cloth, this simple technique yields a versatile ingredient perfect for marinades, raitas, and desserts like shrikhand. With just a few hours in the fridge, you get a concentrated yogurt with tangy flavor and a rich, spreadable texture.
